Asparagus with Poached Eggs and Parmesan Shavings

A couple of Aprils ago, when the world was relatively normal, I had the girls over for a Friday evening drink. I wrote out on the school’s mums WhatsApp group that on this particular Friday, my house would be guy free and child-free, and funnily had a huge take up on my girly evening glass of wine invite. Amongst the lovely ‘hostess’ gifts of wine and choccies and flowers was a gorgeous little bunch of asparagus from a kitchen garden, tied with raffia

This is one of Freya’s favourite meals and is quick and easy as a brunch/lunch or supper meal.

Ingredients
  • 1 bunch of asparagus tips ( Approx. 20 stems)

  • 4 large eggs

  • 1 large knob of butter

  • Crispy fried bacon (Optional)

Step by Step Instructions

Step 1

Bring a small pan of water to the boil

Step 2

Whilst waiting, sweat off the asparagus tips in the butter until tender

Step 3

When the water is boiling, stir the water to create a small whirlpool effect then gently drop the cracked eggs in one at a time (in twos) and stir for about a minute

Step 4

Place the warm asparagus tips onto a plate and top with the poached eggs

Step 5

Add some shavings of parmesan

Step 6

Season to taste and serve immediately
